These cookies are so delicious, no one will suspect they contain a serving of vegetables.
Peanut butter chocolate chip chickpea cookies
Chickpeas (garbanzo beans)
1 12 oz
Nut butter (peanut, almond, etc)
Preheat oven to 350 degrees.
In a blender or food processor, blend the
1 12 oz can Chickpeas (garbanzo beans)
2 tsp Vanilla
Until mixture is smooth. If the mixture is too thick to blend, add 1-2 tbsp water.
In a large bowl, combine the Chickpea mixture with the
1/2 cup Nut butter (peanut, almond, etc)
1/4 cup Brown sugar
1/4 cup Maple syrup
1/4 tsp Baking powder
1/2 cup Chocolate chips
and mix well.
Grease a baking sheet, or line with parchment paper.
Scoop 1 inch balls of cookie dough onto baking sheet. Flatten dough balls with a moistened fork.
Bake for 17 minutes, or until chocolate chips begin melting.
